Sandra Karnaby joined LAU as a full time dietetic internship coordinator in 2013. In addition to her B.S. in Food and Nutrition she holds a master’s degree from Long Island University. As part of her M.S. program she conducted a systematic review of the literature on the topic of infant feeding and the risk of Type 1 and Type 2 diabetes. In 2004, she became a registered dietitian, after completing an accredited and supervised clinical internship at Montclaire State University, and passed a U.S. national examination administered by the Commission on Dietetic Registration. Karnaby’s experience includes, but is not limited to, planning and conducting nutritional programs to assist in the promotion of health, supervising activities of a department providing quantity food services, counseling patients and individuals, and conducting nutritional research.
